This is a really simple alternative to the usual chick pea stuff. I got the idea from Anna Jones in her book ‘A modern way to eat’. I’ll get round to that in Book of the Month soon.
Ingredients:
- 1 tin of black beans, drained
- 1 tsp chipotle paste
- zest and juice of a lime
- 1tsp lemon juice
- 1 tbsp golden syrup ( the original recipe used maple syrup, but I didn’t have any, and anyway I was using chipotle paste which has a nice smokey taste )
- handful of pumpkin seeds
- salt and pepper
- 1 tbsp olive oil
- a small handful of coriander
Method:
- Blitz everything in a food processor until it’s the right consistency.
- Put it in a nice bowl and drizzle with a bit more oil and sprinkle a bit more coriander over the top.
