Black Bean Hummus

This is a really simple alternative to the usual chick pea stuff. I got the idea from Anna Jones in her book ‘A modern way to eat’. I’ll get round to that in Book of the Month soon.

Ingredients:

  • 1 tin of black beans, drained
  • 1 tsp chipotle paste
  • zest and juice of a lime
  • 1tsp lemon juice
  • 1 tbsp golden syrup ( the original recipe used maple syrup, but I didn’t have any, and anyway I was using chipotle paste which has a nice smokey taste )
  • handful of pumpkin seeds
  • salt and pepper
  • 1 tbsp olive oil
  • a small handful of coriander

Method:

  • Blitz everything in a food processor until it’s the right consistency.
  • Put it in a nice bowl and drizzle with a bit more oil and sprinkle a bit more coriander over the top.
